Most chocolate glaze recipes use gelatin sheets that I would have to order from the Internet. It is much easier for me to use gelatin powder because I can buy it at the grocery store. This is the only recipe I have found that uses gelatin powder. It tastes great and I like to use it to glaze my cakes.
1/2 cup heavy cream
1/2 cup water
1 cup granulated sugar
1/2 cup cocoa powder
1 1/2 tablespoons gelatin power
1/4 cup cold water
1. In a small bowl, sprinkle gelatin powder on 1/4 cup cold water and sit for 5 minutes.
2. In a small saucepan, combine heavy cream, water, sugar and bring to full boil on medium high heat.
3. Reduce the heat to medium, add cocoa powder and whisk constantly for 4 minutes. Off the heat and stir in gelatin until smooth. Transfer to a medium bowl and cool to room temperature. Chill in the refrigerator until it thickens, about 20 to 30 minutes.
4. Remove from the refrigerator, stir and pour over the cake!
NOTE: This chocolate glaze can be made ahead of time and can be reheat over low heat until it thickens.
