White Chocolate Macadamia Nut Cookies Recipe

One of my friends and her daughter visited us in Miami from Switzerland. She loves green tea macadamia cookies and she asked me to make some. I found this recipe on the allrecipe.com website. The cookies came out great. Crispy crust and chewy inside. My friend really liked it and said it tasted as good as her favorite one in Switzerland but without the green tea flavor.

1          cup butter, softened
3/4      cup packed light brown sugar
1/3      white sugar
2          eggs, room temperature
1          teaspoon vanilla extract
2 1/2  cups all-purpose flour
1          teaspoon baking soda
1/2      teaspoon salt
1          cup coarsely chopped macadamia nuts
1          cup coarsely chopped white chocolate, or white chocolate chips


Preheat oven to 350 degree F (175 degree C).

In a medium bowl, shift together, all-purpose flour, baking soda and salt. Set aside.

Using stand mixer fitted with paddle, beat together the butter, brown sugar, and white sugar on medium speed until smooth, about 5 minutes. Beat in the eggs, one at a time, add vanilla extract. Reduce speed to low, gradually add flour mixture into the creamed mixture just to combine, about 15 seconds. Give batter final stir by hand. Stir in the macadamia nuts and white chocolate. Drop dough by teaspoonfuls onto ungreased cookie sheets.

Bake cookies, 1 sheet at a time for 10 minutes, rotating pans half way through baking.

Let cookies cool on sheets for 5 minutes, then transfer to wire rack. Let cookies cool completely before serving.
